THE VINEYARD
Grape Varieties: Muscat Petits Grains (50%) and Muscat d’Alexandrie (50%).
Soil & Terroir: Clay and chalk on the upper slopes. At the food of the Pyrenees: Aspres (« dry and stony » in Catalonian).
Density of the plantation: 4 000 vines per hectare.
Yield: 20 Hl / hectare.
Pruning: Gobelet technique for Muscat d’Alexandrie and cordon Royat technique for Muscat Petits Grains.
Average age of the vines: from 20 to 25 years.
Gentle Cultivation as needed.
THE WINE
Grape harvest: machines and manually.
Vinification: Direct pressing. Cold Fermentation (16°C maximum). Fortification of the must called "mutage" (addition of 96% neutral vinous ethyl alcohol, as eaux-de-vie are not authorized). This addition, which is between 5 to 10 % of the volume of must being vinified, stops the fermentation and allows the wine to retain some of its grape natural sugars.
Maturation: maturing in inerter concrete tanks for 6 months under temperature control.
Fining and light filtration before the final blend and bottling.
Tasting notes:
Color: pale gold.
Nose: complex and elegant flavors of white blossoms (verbena), yellow fruits (peaches) and hints of vanilla.
Mouth: Rich and refreshing. Beautiful balance between sweetness and acidity. Hints of mint and citrus on the final.
Service & Gastronomy:
The Catalonian Aperitif par excellence ! To enjoy with foie gras, spicy Asian food, blue cheeses like Roquefort and fruity desserts (sorbets, cakes). Serve it chilled between 8 and 10°C.
Alcohol: 16% Vol. Residual sugar: 110 g / liter.
