RIVESALTES GRENAT Vintage 1999
THE VINEYARD
Grape variety: Grenache Noir (100%).
Soil & Terroir: Clay and chalk on the upper slopes. At the food of the Pyrenees: Aspres (« dry and stony » in Catalonian).
Density of the plantation: 4 000 vines per hectare.
Yield: 20 Hl / hectare.
Pruning: Gobelet technique.
Average age of the vines: more than 40 years.
Gentle Cultivation as needed.
THE WINE
Grape harvest: manually.
Vinification: Maceration (3-5 days). Fortification of the must is called "mutage" (addition of 96% neutral vinous ethyl alcohol, as eaux-de-vie are not authorized). This addition, which is between 5 to 10 % of the volume of must being vinified, stops the fermentation and allows the wine to retain some of its grape natural sugars.
Maturation: 3-4 months in inerter concrete tanks under temperature control.
Fining and light filtration before the final blend and bottling.
Tasting notes:
Color: deep and brilliant garnet-red.
Nose: complex and lush flavors of red and black berries.
Mouth: rich yet refreshing. Great balance between sweetness and acidity. Hints of prunes and liquorices.
Service & Gastronomy:
The Catalonian Aperitif par excellence ! Enjoy it with spicy Asian food, but also with chocolaty desserts like black forest or just red fruits (strawberries and raspberries). Serve it chilled between 12 and 14°C.
Alcohol: 16% Vol. Residual sugar: 110 g / litre.
The vintage 1999: A hot and humid summer with a small yield. The wine is concentrated and rich in flavors.
